Blue Franconian is rich with tannins, which have a positive effect on our health. The maturity of the vintage provides aromas of forest fruits, especially blueberries and raspberries, with longer aging it also gains the vanilla tones. Fermentation occurs at high temperature above 28 degrees in a closed system, where it is fermented 70%, while further 30% of fermentation occurs in the barrel.
It must be aged in a wooden barrel, of suitable volume (not too large). We maintained constant temperature and humidity, enabled access of sufficient air and oxygen, without which there would be no Blue Franconian.
Tannins required more time to soften, since it was aggressive and astringent when young. The colour also needs air, which is why we decanted in sunny weather, through air, so that it glowed even more intensively. The wine is suitable for aging.
